Benefits of Cucumber and Salmon in Low Carb Diet:
Cucumbers and salmon are both fantastic additions to a low carb diet. Cucumbers are not only low in carbs but also high in water content, making them incredibly refreshing and hydrating. They are also rich in vitamins and minerals, including vitamin K and potassium.
On the other hand, salmon is an excellent source of omega-3 fatty acids, which are essential for brain health and reducing inflammation in the body. It’s also packed with protein, making it a great choice for those following a keto diet.
Together, the combination of cucumber and salmon in these low carb bites provides a delicious and nutritious snack that will keep you satisfied and on track with your diet goals.
How to Make Cucumber Salmon Bites:
In a small bowl add the cream cheese, sour cream, dill, garlic, and lemon juice. Use a hand mixer to blend together then add to a piping bag.
If you don’t have a piping bag you can add it to a zip up bag and cut a small hole in the corner.
Slice the cucumber into bite size pieces. I got 30 slices out of mine, but it depends on the size of your cucumber.
Cut the salmon into 30 bite size pieces.
Top each cucumber with a piece of salmon and the cream cheese mixture.
I like to top each cucumber with more dill and/or fresh cracked black pepper.
Serving Suggestions:
These bites make a fantastic snack on their own, but you can also get creative with some delicious accompaniments. Serve them on a platter with a side of sliced avocado and cherry tomatoes for a refreshing and colorful snack.
If you’re hosting a gathering, arrange the bites on a charcuterie board with other keto-friendly treats like cheese, olives, and pickles.
You can even turn them into a mini sandwich by adding a second cucumber slice on top. No matter how you choose to enjoy them, these Low Carb Cucumber Salmon Bites are sure to impress and satisfy your cravings.
