How to make Cilantro Lime Chicken:
I used chicken breasts for this recipe, but you could also use chicken thighs.
To make it in the Instant Pot I added 1 cup of chicken broth to the pot, followed by the juice of 2 limes, 1/2 cup cilantro, 2 cloves of minced garlic, cumin, chili powder, and salt.
Stir it all together then add the chicken.
Next, I locked the lid to the Instant Pot. Cook it on high pressure for 10 minutes, then let the Instant Pot do a natural release for 10 minutes.
Release the pressure, then remove the chicken. Shred it, then put the chicken back in the liquid until you are ready to serve it.
To make it in the slow cooker you add the chicken broth, juice of 2 limes, 1/2 cup cilantro, minced garlic, cumin, chili powder, and salt. Stir it all together and add the chicken.
Put the lid on the slow cooker, then cook on low for 6 hours. Remove the chicken and shred it, then put it back in the liquid.
Serving Suggestions:
