Method
For the Intant Pot:
- Add the chicken broth to the Instant Pot. Add the juice of 2 limes, cumin, chili powder, salt, and 1/2 cup cilantro.
- Stir together, then add the chicken. Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Press the manual button and set the time for 10 minutes.
- When the time is up let the pressure manually release for 10 minutes, then release the pressure and remove the lid.
- Remove the chicken and shred it with a fork. Place the chicken back in the liquid with the remaining cilantro. Keep the chicken in the liquid until you are ready to serve it.
For the slow cooker:
- Add the chicken broth to the slow cooker. Add the juice of 2 limes, cumin, chili poder, salt and 1/2 cup cilantro.
- Stir together and add the chicken. Place the lid on the slow cooker and cook on low for 6 hours.
- Remove the chicken and shred it with a fork. Place the chicken back in the liquid with the remaining cilantro. Keep the chicken in the liquid until you are ready to serve it.
