Bacon and Broccoli Frittata

Ingredients
  

  • 6 eggs
  • 3/4 cup unsweetened almond milk
  • 2 cups chopped broccoli
  • 1/4 cup sliced red onion
  • 1/2 cup mild cheddar cheese, shredded
  • 3 slices center cut bacon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Method
 

  1. Preheat oven to 350 degrees F. Spray a 9" pie dish with nonstick cooking spray.
  2. Spray a nonstick skillet with olive oil spray. Sauté the broccoli and onions for 7-10 minutes.
  3. In a medium bowl add the eggs, almond milk, salt, pepper, and garlic powder. Whisk together.
  4. Add the broccoli and onions to the pie dish. Next, add the chopped bacon and cheddar cheese.
  5. Pour the egg mixture evenly over the ingredients.
  6. Bake 40-45 minutes or until the center is set. Let sit 5 minutes before serving.
